About the role
コミは、シェフ・ド・パルティの下で一つのセクションを担当します。仕込み、サービス、担当ステーションのミザンプラスおよび衛生記録の管理が主な業務です。厨房、セクション、ブリガード（厨房組織）の体制は雇用主が定めます。
厨房職では通常、実技試験（トレードテスト）が実施されます。試験の内容は一般的なひな形ではなく雇用主の要件に基づいて構成され、承認済みのジョブオーダーに明記されます。
