About the role
A commis works a section under a chef de partie: preparation, service, and the station’s own mise en place and hygiene records. The kitchen, the section and the brigade structure are the employer’s.
Kitchen roles are usually trade tested. What the test covers is built from the employer’s requirements rather than from a generic template, and it is set out on the approved job order.
